I knew our visit to Mount Rushmore would be a lot of fun. But I had no idea that the iconic national memorial was just the tip of the iceberg for a South Dakota vacation. It started out as our destination, but became our jumping off point — and there are still plenty of sights there we've yet to see. Ave Maria University, which is seeking recognition from the bishop of the Diocese of Venice, Fla., is a university in the Catholic tradition.
